Meatless Monday!! It's Exciting!! Vegan Power Soup Recipe

This new recipe is one that you will see in our upcoming book but it is so delicious we couldn't wait to share it with you! Packed full of nutritional awesomeness, your tastebuds will rejoice and your cells will scream with delight!

Vegan Power Soup

What you need for the soup base:

2 L filtered water

1/2 sweet onion, chopped

2 carrots, chopped

2 cloves of garlic, slightly crushed

1/2 bell pepper, chopped

2 celery sticks, chopped

handful of parsley, not chopped

1 inch ginger root, chopped

1 inch turmeric root, chopped 1 tsp sea or Himalayan salt

What you need to add to the soup base:

1 cup Quinoa

2 cups filtered water

1 tbsp powdered turmeric

1 package firm tofu, cubed

1tbsp coconut oil

Put some more power in the soup:

Kale

Spinach

Green onion

Broccoli

Carrot

Peas

Cauliflower

Cherry Tomatoes

Cayenne

Sea or Himalayan salt to taste

Anything else your heart desires!

How to make:

  • Place all of the soup base ingredients in a large pot and bring to a boil. Once boiling has commenced, simmer for at least 45 minutes.

  • In another pot or rice cooker make the quinoa. Add 1 tbsp of powered turmeric to the water and quinoa and stir. Cook until done.

  • Take the 1 large, minced garlic clove, 1 tbsp coconut oil and cubed tofu. Fry on medium heat for 10 minutes.

  • Once soup base is done, add quinoa and tofu. Place in bowl(s). If you are not using it all in one serving, no worries! Store in the fridge or freezer. Wait until serving to put more power in to keep the veggies crispy!

  • Put some more power in the soup and serve!
