This dish is absolutely to LIVE for! It is another delicious creation made by the chef's at Nourish Bistro in Banff, Alberta.
This vegan mac and cheese (or what they call mac & squeeze) is made with quinoa (gluten-free but not vegan) pasta or gnocci (which is vegan), smothered in a creamy coconut and smoked paprika sauce, toped with herbed bread, fresh veggies and house-made kale chips.
Like the Nourish Bistro menu says, "you'll love it so much, you'll want to hug your chef."
The moment this dish is served to you it is like heaven! The dish is colourful and beautifully plated. The aroma of cheese tickles your nose, making your mouth water! As you dip your fork into the dish to scoop out the first bite the creamy cheese that smothers the pasta glistens and calls your name.
The moment the first bite hits your tongue you feel like you have died and gone to heaven. The rich and creamy texture of the sauce, the perfectly cut and cooked pasta and the sprinkle of kale chips is the perfectly delicious combination; especially for a vegan who has not had mac and cheese for a very long time.
This dish is worth the drive to Banff.
