Mango Coconut Chia Pudding

Chia pudding is one of the easiest ways to get a tasty snack that's power packed with nutrient dense, and healing, ingredients.

What is chia?

Chia seeds are small black seeds that come form the plant Salvia Hispanica, which is related to mint. Chia seeds are an ancient food, (chia means strength in the Mayan language) and cherished by civilizations to be a great source of sustained energy.

Why you want to eat chia seeds?

  • These little seeds are full of fibre and help get things moving in the digestive tract

  • When wet these seeds turn into a gelatinous texture. This gel helps pull toxins form the body and safely flush them through the digestive tract

  • High in omega fatty acids (the healthy fats)

  • Good source of calcium, magnesium, manganese and phosphorous

  • High in antioxidants

  • High in protein (14%)

  • They are usually organically grown and non-GMO

  • Gluten-free

What can you do with them?

Our favourite way to eat these seeds is to throw a tablespoon into a smoothie or, even better, make a pudding! Below is one of our favourite chia pudding snacks that is super easy to make!

Mango Coconut Chia Pudding

What you need:

  • ½ cup organic canned coconut milk

  • ½ cup unsweetened almond milk

  • ¾ cup fresh or frozen mango, diced (if using frozen be sure to thaw first)

  • 2 tbsp chia seeds

  • 1 tbsp sweetened shredded coconut

  • 1 tsp pure maple syrup

How to make it:

  • Combine all ingredients in a large glass jar.

  • Mix well and seal.

  • Refrigerate for at least 5-6 hours.

  • Serve!
