Lemon Lentil Bowl - Another MUST MAKE recipe!

We LOVE to eat out! I'm sure you have noticed... but sometimes we want to get creative in the kitchen and spoil the people around us who are always begging for us to make delicious food!

As the Ontario tour continues, we thought we would take a short break form reviews and share another delicious recipe with you!

Lemon Lentil Bowl

Ingredients:

  • 2 cups brown rice, cooked

  • 2 cups black lentils, cooked

  • ½ red onion

  • 3 garlic cloves, crushed

  • 8 sundried tomatoes

  • 1 red or yellow pepper

  • 1 tomato, chopped

  • 2 handfuls spinach

  • 1/3 bunch parsley

  • 1 tbsp olive oil

  • pinch salt and pepper

1) Lentils are rich in fibre, vitamins, healthy carbs and protein.

2) Brown rice is delicious and good for you!

3) The lemon dressing mixed with the sun dried tomatoes, garlic and other ingredients literally makes for a party in your mouth!

5) It's easy to make! Who doesn't like that?
